Ages, I know... but I've been requested, repeatedly and by multiple sources, to get back into blogging. Why, I don't quite understand, but perhaps I will once I start again.

I'm really not sure where to start. Especially when I haven't updated in... what, years now? Yup, just double checked..going on almost exactly 2 years. Sooo much has happened, I'm not even sure where to start. So, let's babble.

First of all, I guess I'll go over big recent happenings. Currently, I'm engaged. Been with the same girl during this entire hiatus (yeah, my "friend"...man, I'm such a courteous dork). I've now got a new job, at another call center, and currently do not own the karaoke business... just sold it two months ago. Currently, we've got a boarder in our house, who's having a hard time getting a job. I admit, I am getting quite frustrated, as we are on month 3 or 4 of him living off of us. But, at long last, things might be looking up for him getting a job and a place to live.

For the near future, I'm getting married in November, so long as I'm not complete idiot/douchebag between now and then. We've got the bare-bones planned already, and we've got pretty much everything else that will make it pretty left. Also, we're planning on moving to Portland, OR in February. Expenses for both is kinda steep, as we are paying fully for both, but considering how excited we are, I don't think it matters.

As I'll probably be updating a bit more often, now that I know I have access to here from work, I'll wait for the updates on the little things. I'm curious as to whether or not anyone is actually on here anymore, or if they are, if anyone will notice... But hey, it's a journal, it's not a requirement to be read by others. :D

OMG these are SOOOOOOOO good! HAHA... my sisterinlaw started naming off stuff and my cousin and I went pizza burgers? What? So she started describing them and yea, they got made and they are all gone hahahah! They are kinda like a mix between sloppy joes and pizzas... either way... really tasty and super simple!

A little time consuming to make, but worthwhile because it's so yummy:

Start with rice paper (soak in hot water to soften), and in my case, steamed shrimp, marinated (soy sauce, oyster sauce, pepper, corn starch, water, garlic) and sauteed beef, cilantro, and lettuce. Whatever fits your fancy will work for these. I usually add glass noodles or rice vermicelli, but I didn't have any the night I made these.

Everything prepped, I pile it on the wet rice paper and roll it up like an eggroll or burrito, and so you go from this:

Tonight I made my first homemade alfredo sauce. I'm struggling with it because while the flavor was just about perfect, the consistency was only good when it was piping hot. As it cooled, it got to be the consistency of a nice buttercream frosting. Not quite right, obviously. It was definitely worth the effort and I'll definitely be making it again, but I'm hesitant to post a recipe that's just not right.

The trick will be adding more milk while keeping the flavor strong. Any suggestions are welcome! It was also my first time trying Aldi's Fit & Active Whole Wheat Pasta, and I have to say it was a big win. YUM!

Oh Tyler Florence, you're kind of dreamy in that dorky way that I like. You can come cook with me anytime, but in the meantime I'll take your cooking advice. This recipe helped me learn not only how to make my first successful pan gravy (who knew I wasn't using nearly enough flour in my roux?!), but also the best gravy I've ever made from scratch. I replaced the cayenne pepper with paprika, the buttermilk with fat-free half & half, but it all turned out incredible! Too bad the photos didn't really turn out. Practice practice practice.

The main purpose of this yummy concoction was to stick it to my snobby brother, who believes that Aldi's food is disgusting. Using almost all Aldi ingredients, with the addition of some pre-cooked all-beef Italian sausage I bought for 99¢ for a package of four in the discount meat bin at the grocer, some leftover provolone cheese and a jar of sauce we had a delicious and simple baked pasta.

The whole meal, which fed six and left plenty of leftovers, cost about $6. Cheap AND delicious!



Easy tips (Rachael Ray taught me)...

* Cook the pasta to a chewy al-dente before putting in the oven
* Make with a warm sauce to reduce baking time
* Put under the broiler (preheated to 425º) for about 10 minutes

Does it ever seem like everyone else is having so much fun and you're doing a lot of laundry and errands?

Mary- sorry I haven't answered! You always call when I'm in the car. I can afford air conditioning right now and WA has a new no cell phone law. Call me tomorrow!

Life here is hard right now. Rodney lost his job. Carpetner+Bad Economy+Housing Crisis=fecked. Pray that he gets a new one soon. We've got savings to last us through august but that is as far as we get. Plus that savings was to go towards vehicular improvements in our lives... oh well.

I'm tired of living in the ghetto. Rodney's kid got mugged a few weeks back. Now I'm scared to walk the 2 blocks to the movie or grocery store. It isn't as bad an area as most places all over the earth, but its getting old.

Money is tight and when you live in an urban area, money is crucial to everything. Makes times tough. If things don't get better soon, there is a good chance we'll have to admit defeat and move back to TN. Move into my parents house and convert their shed to a guest house (they really support this idea). I know this makes Mary very happy, but I'm not too thrilled with it. Rodney could probably find work, but me... I dunno.

I COULD open a nursery our own nursery business called Herban Gardens.

We could have two parts to the business, Herban Landscapes for shrubs, trees, perrenials, and annuals, and Herban Feast for vegetables and fruit. We can sell regular plants that haven't been potted and then for the urbanites in knoxville we create entire ready-made gardens for them. From the tiny 2x4 patio blub garden to the large ready-made alleyway vegetable garden. We can even do sustainable and organic maintenance on our "gardens" (not lawnmowing).

PLUS we could rent the field next door from HC for our nursery plants! It'll be great. We won't make shit doing it but I probably wouldn't have heart problems and we'd both be doing something we love! Dibs on the veggies and flowers. Some want to take the trees and other berbaceous plants and the business side of the stuff?

Now where to get a few greenhouses.....

And customers who would support this in knoxvegas...

What about Cincinnati instead...

Ugh. Its too hot to sleep in this house!
